From Gin to Single-Malt: Bellarine Distillery Masters the Art of Craft Spirits

Set on seven leafy acres in Drysdale, Bellarine Distillery, home to The Whiskery, is a destination where craft, character, and hospitality blend effortlessly.

Established in 2015 by Russ Watson and Lorelle Warren, the distillery revived spirits production on the Bellarine Peninsula after decades, quickly earning a reputation for award-winning gins, rare single-malt whiskies, and inventive craft cocktails. The rustic-chic cellar door, nestled among heritage trees and lush gardens, invites guests to sip, savour, and unwind.

Inside the original farm shed, fully renovated into a warm tasting space, small-group experiences encourage intimate exploration of the distillery’s offerings. Visitors can enjoy cocktail flights, gin tastings, and whisky samplers, paired with locally sourced cheese and produce boards or simple pizzas, while decks and firepits provide relaxed spots to linger under dappled light or a winter glow. Every dram tells a story. From the citrus-forward Teddy & The Fox Gin to the dark, chocolatey Trooper & The Roo, each spirit embodies Bellarine terroir and the distillers’ playful creativity.

Head Distiller Craig Michael, with a Bachelor of Science and Diploma in Distilling, oversees production with scientific precision and inventive flair. Their single-malt whiskies, carefully matured in selected barrels, offer honeyed viscosity, dark fruit aromas, and buttery finishes, demonstrating the meticulous craft behind each bottle.

The Whiskery’s charm lies not only in its spirits but in its environment. Tables and couches on lawns, gardens perfect for summer afternoons, and a fire-lit sanctuary in cooler months create the ideal setting for tasting. The venue is 18+ only, focusing on elevated tasting experiences and a carefully curated selection of drinks. Weekend menus include fresh pizzas and platters of local cheese and produce, enhancing every sip and flight.
